Dalgona Coffee + Whipped Matcha: Origin and Best Recipe

Dalgona coffee has become one of the most popular trends during the COVID-19 pandemic, spreading literally everywhere all over the internet. Known also as the “Korean Coffee”, I could notice only recently that also coffee shops in Seoul started selling it.

What is Dalgona Coffee?

Dalgona Coffee is basically a reversed caffe latte/cappuccino. When we order a cappuccino, we usually get liquid coffee with a delicious milk foam on the top, well, Dalgona is exactly the opposite. The liquid part is made by milk (mostly iced milk) and the foam is made by vigorously mixing instant coffee and sugar. The way Dalgona Coffee became so popular is also very interesting.

The first time the term Dalgona Coffee popped out was back in January in Korea when, during the Korean TV show “Stars’ Top Recipe at Fun-Staurant”, the actor Jung Il-Woo ordered a coffee in Macau. This custom coffee, made with instant coffee and sugar, reminded him of Dalgona, the Korean candy made with melted sugar and baking soda.

Fun fact: the adjective 달다 (dal-ta), where Dalgona comes from, means ‘to be sweet’ in Korean.

After this trend spread everywhere on the internet, I also decided to try to make my own version of Dalgona Coffee, with an additional version made with matcha powder that we are going to call Dalgona Matcha Latte. How to make Dalgona Coffee:

Ingredients:

Directions:

  • 2 Tablespoons of Instant Coffee
  • 2 Tablespoons of Sugar
  • 2 Tablespoons of Hot Water
  • Milk 
  • Ice (for serving)

1. Combine instant coffee, sugar and hot water in a mixing bowl. Mix them well. Using an electric hand-held mixer, whip the coffee mixture until it is light brown and fluffy. (you can also use a milk foamer, or even do it manually. In the last case it will take more time).

2. Add the ice cubes in a mug/glss then pour over the milk. Add the whipped coffee on top of the milk. 

3. Serve.

 

How to make Dalgona Matcha Latte:

Ingredients:

Directions:

  • 2 Tablespoons of Matcha Powder 
  • 1/4 cup of whipping cream (100ml)
  • 2 Tablespoons of Sugar (optional)
  • Milk 
  • Ice (for serving)

Unlike instant coffee, matcha powder has different agents and in order to be whipped it needs some different ingredients. Some people use the egg white, but i prefer to use whipping cream (sugarfree). In this way you don’t need any sugar to make the whipping foam, so adding it it’s just to make the drink sweeter.

1. Combine the cream, sugar, and matcha in a bowl. Mix it well then start whipping it until it becomes fluffly. Tips: Whipping Cream whips very fast, don’t whip it too much or the cream will become too dense. The consistency should be soft.

2. Add the ice cubes in a mug/glss then pour over the milk. Add the whipped matcha on top of the milk. 

3. Serve.

 

Matcha Powder could be a difficult product to get at the supermarket, outside Asia, but you can easily get it on Amazon.

As I mentioned before, while for the Matcha version is necessary to add an ingredient that can be whipped this is not needed in the coffee version. However, I still decided to try to use whipping cream with instant coffee. Well, shortly. I prefer the version with instant coffee, sugar and hot water only. It’s less dense and it’s easier to drink it in this way. The whipping cream gives it a different consistency that make it look like more a coffee dessert, that I would eat with a spoon for example . So, if this is what you are looking for, using whipping cream could be the best choice for you.
